How to Make Alfajores
Ingredients
- 2 cups all-purpose flour
- ½ cup cornstarch
- ¾ cup unsalted butter, at room temperature
- ½ cup sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 cup dulce de leche for filling
Instructions
- Cream the butter and sugar together until smooth.
- Add the egg yolk and vanilla extract. Mix well.
- Sift in the flour and cornstarch. Mix until a soft dough forms.
- Chill the dough in the refrigerator for 30 minutes.
- Roll the dough to about 0.2 inches (0.5 cm) thick. Cut into circles.
- Bake at 350°F (175°C) for 10–12 minutes, or until the edges are just golden.
- Let cool. Fill with dulce de leche and sandwich two cookies together.
- Dust with powdered sugar, shredded coconut, or dip in chocolate to decorate.
