No-Bake Lemon Dessert

Posted by Carolina Roland on

Refreshing, creamy, and citrusy — this Argentinian-style lemon dessert is the perfect no-bake treat for warm days. At Wooden Table Baking Co., we love how this simple recipe captures the essence of Latin flavor with just a few ingredients and a lot of soul.

Ingredients

  • 1 package of lemon cookies (about 200g), briefly soaked in milk
  • 400 ml (1 2/3 cups) of whipping cream
  • 1 can of sweetened condensed milk (approx. 395g)
  • Juice of 4–5 juicy lemons (about 1 cup)
  • Zest of 1 lemon (for garnish)

Instructions

  1. Line the bottom of a glass dish with lemon cookies briefly dipped in milk.
  2. Whip the cream until stiff peaks form.
  3. Add the condensed milk and gently mix.
  4. Stir in the lemon juice until creamy and slightly thickened.
  5. Layer: half cream, another layer of lemon cookies, then rest of cream.
  6. Garnish with lemon zest and refrigerate for at least 4 hours.

Optional Tips

  • Add lemon curd between layers for more flavor.
  • Decorate with berries or mint.
  • Top it with our Lemon Alfajores for a twist!
