Why isn't this alfajor coated?

There are many versions of alfajor in Argentinian culture. Some are coated, others aren't. In this case, we decided to give the cookie all the spotlight. Some doughs, like the Snickerdoodle or our Traditional Argentinian Alfajor, are so full of character that they don't need a coating: their flavor speaks for itself.
