Homemade Alfajores Recipe

How to Make Alfajores

Ingredients

  • 2 cups all-purpose flour
  • ½ cup cornstarch
  • ¾ cup unsalted butter, at room temperature
  • ½ cup sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup dulce de leche for filling

Instructions

  1. Cream the butter and sugar together until smooth.
  2. Add the egg yolk and vanilla extract. Mix well.
  3. Sift in the flour and cornstarch. Mix until a soft dough forms.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. Roll the dough to about 0.2 inches (0.5 cm) thick. Cut into circles.
  6. Bake at 350°F (175°C) for 10–12 minutes, or until the edges are just golden.
  7. Let cool. Fill with dulce de leche and sandwich two cookies together.
  8. Dust with powdered sugar, shredded coconut, or dip in chocolate to decorate.
